Picture this... Night fall has set in and the temperature is dropping down to 30; the wind starts howling through the trees. If we weren't in Texas you could imagine snow starting to flutter down. Then you get this deep down craving for something warm and hearty that will make you warm all the way to your toes. All of a sudden you remember that you have this baked potato soup recipe you got from Bri's Blog and you go and make it and enjoy everything you had been craving to get warm deep down inside.
Okay here it is ladies... The greatest Baked potato soup... from my Taste of Home book to you. This makes 10 servings so if you want less just cut the recipe in half.
WHAT YOU NEED:
4 lg baking potatoes 6C milk
2/3 C butter/ marg 1C (8oz) sour cream
2/3 C A-P flour 1/4C thinly sliced green onions
3/4 t. salt 10 bacon strips, cooked and crumbled
1/4 t. white pepper ( i used black and it is fine) 1C (4 oz) shredded cheddar cheese
WHAT TO DO:
Bake potatoes at 350 for 65-75 minutes or until tender; cool completely (potatoes will cool quicker if you cut them in quarters). Peel and cube potatoes. In a large saucepan, melt butter; stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat; whisk in sour cream. Add potatoes and green onions. Garnish with bacon and cheese and chives. ENJOY!
